You need data sets in rows, with each column being a field. That will facilitate import and export, as well as being the way that Excel expects to see its data. To switch the stuff you've already done, copy it and then switch to another page and do Edit, Paste Special... The dialogue box has a transpose option.
To do more complex statistical analysis you should go to Tools,Add-ins and tick the Analysis Toolpak. This will give you an extra set of features under Tools,Data Analysis, including a regression wizard.
