Hi,I'd be most grateful for some suggestions of wine pairing for the following:Starter:Confit salmon, pickled mouli & wasabiMain:Braised shoulder & roasted loin of pork,butternut squash & caramelised shallotThere will be some people who only drink white, so I need a white that will go with both courses, but all of the red wine drinkers will also drink white so I don't necessarily need a red to go with the starter.I was thinking of something along the line of a New Zealand Pinot Gris for the white and perhaps a red Loire wine or Chianti for the red but any other suggestions or comments would be most welcome.Dino
