Hi,

I'd be most grateful for some suggestions of wine pairing for the following:

Starter:
Confit salmon, pickled mouli & wasabi

Main:
Braised shoulder & roasted loin of pork,
butternut squash & caramelised shallot

There will be some people who only drink white, so I need a white that will go with both courses, but all of the red wine drinkers will also drink white so I don't necessarily need a red to go with the starter.

I was thinking of something along the line of a New Zealand Pinot Gris for the white and perhaps a red Loire wine or Chianti for the red but any other suggestions or comments would be most welcome.
